I would suspect your database version or type to be the issue. What version of Joomla are you currently using and trying to update to 5.0.3?
You can only migrate to 5.x from 4.0.x (or more recent 4.4.x series). The pre-update checklist should give some clue as to the system requirement that your hosting is not compliant with.
I've seen a few reports on the forums here from other users saying their web hosting companies didn't offer the minimum version of either MySQL 8.0.x or MariaDB 10.4.x (per the requirements link posted above).
